Stuffed Vegetables

Dr. Sebi advocated for a plant based diet that contained natural, alkaline foods, that supports health. In alignment with Dr. Sebi’s approach, here are three recipes that are delicious and nutritious and include ingredients from Dr. Sebi’s nutritional guide (food list):

1. Kamut Salad with Roasted Vegetables:

Ingredients:

  • 1 cup cooked Kamut
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Alkaline salad dressing for drizzling

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cherry tomatoes, bell pepper, zucchini, and red onion in olive oil, salt, and pepper.
  3. Roast the vegetables in the oven for 20-25 minutes until they’re tender and slightly caramelized.
  4. In a bowl, combine the cooked Kamut and roasted vegetables.

  • 1 red onion, finely diced
  • 1/2  teaspoon alkaline spices
  • Salt and pepper to taste
  • Avocado for garnish
  • Fresh basil for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix cooked quinoa, chickpeas, tomatoes, kale, red onion, salt and pepper.
  3. Stuff each bell pepper half with the quinoa mixture.
  4. Place the stuffed peppers in a baking dish and cover with foil.
  5. Bake for 25-30 minutes until the peppers are tender.
  6. Garnish with sliced avocado and fresh basil before serving.

3. Alkaline Green Smoothie:

Ingredients:

  • 2 cups kale
  • 1 cucumber, peeled and chopped
  • 1 green apple, cored and sliced
  • 1 key lime, juiced
  • 1 cup coconut water
  • Ice cubes (optional)

Instructions:

  1. Blend kale, cucumber, green apple, lime juice, and coconut water until smooth.
  2. Add ice cubes if you prefer a colder smoothie.
  3. Pour into a glass and enjoy a nutrient-packed, alkaline green smoothie.
