Chickpea Mushroom Stir Walla Recipe
1 cup cooked chickpeas
1 cup chopped/diced mushrooms
1 small onion, diced
8 cherry/plum tomatoes
1 teaspoon approved oil
1/2 bell pepper, chopped
1/2 teaspoon salt
1 sprig of thyme
1. Heat pan and add oil.
2. Add onion, bell pepper and tomatoes, thyme and saute for 2 minutes.
3. Add mushroom, chickpeas, pepper and salt and combine everything nicely.
4. Cover and allow to simmer for about 10 minutes over medium to low heat.
5. Allow to cool and serve.
I like it basic most of the time but you may choose to add other herbs or 2 tablespoons of your favorite nut milk. These you would add at the same time you add the chickpeas and mushrooms.
How do you eat it:
> Eat as a side dish
> Eat with a vegetable salad
> Use it to fill wraps or spelt pitta bread
> Serve with dumplings, quinoa, rye crackers, squash mash, raw zucchini noodles etc.
